Haldi Turmeric Needs this ingredient to be absorbed properly

Curcumin is taking the Western world by storm. While Indians have been using it daily in their curry and dishes. But there is one essential information missing to the Western people, which I am sure we Indians will soon copy and lose the benefits of Haldi or Turmeric.

In Indian curry masala and dishes, we add a lot of various garam masalas in powdered or seed, flower, fruit, bark or leaf form. We add one teaspoon and we are done. Thank God for the ancient cooking in India. Such knowledge and richness passed down to generations without having to worry about healthy food.

But ever since we globalized our cuisine and food recipes, we are adopting Western recipes too which lack the essential benefit of Garam Masalas. All they add is a bit of salt and pepper. A little more enterprising chef may try adding parsley and garlic.

Jai Ho our traditional gyan of recipes that we were blessed with different masalas that must be added with different vegetables, pulses, and non-vegetarian dishes.

Off late the latest fad in West is to consume Turmeric. I was quite surprised to read that they add haldi in their coffee and tea. Well its stupid to add a good ingredient with a bad one like coffee and tea. But I will not discuss tea and coffee in this post but how to not copy the western way to consuming haldi.

So we Indians need not worry as we take atleast one teaspoon haldi per day in our food.

But if you want to increase your intake for health benefits like fighting cold, cough, inflammation, joint pains then you must know the right way to consume.

If you want to drink Haldi in Milk with honey or sugar, add one teaspoon of Ghee. Haldi is absorbed faster when it has an oily friend along with it. Else most of haldi will be down the flush.

And now the most important ingredient that will ensure that haldi is absorbed by maximum percentage and not flushed out by the liver or kidney is Kali mirch powder or black pepper powder. If you have to drink one tsp of Haldi in warm water, you must add a pinch of kali mirch powder. Black pepper is proven to increase the absorption of curcumin in Haldi by tenfold.

I boil lots of ginger and haldi and add a pinch of pepper whenever I sip a glass of this powerful anti-inflammatory drink. Give it to elderly people especially.

Though I have not yet gotten my sons to develop taste for this awesome drink, I guess when they are grown up they will read my blog and drink the power drink.

How To Growth Strength & Height of Your Children?

All those who are born in 1950 to 1980 have consumed Dalda and Refined oils from their teenage to now. So they still have stronger bones. But all those who were born in 1990 onwards have actually lived their entire life on Refined Oil and no to very little Ghee for last 25 years! Well, fortunately, our body is like a magic box. It renews skin cells in 27 days, blood in 120 days and bones in 8 to 11 months! (Count of days should not be taken literally but they are approximate days.) So they can still change their body constituents if they start today. Now think of all the kids who are born in the last 10 to 15 years! They not only did not eat ghee but ate refined oils like canola, sunflower, soybean, refined maida, corn syrup, chemicals in Coke/ Pepsi, GMO soybeans, and hormone injected meat! Yeah, your children and my children. 🙁

Let’s take the oath to undo the harm we have done to our children unknowingly by starting with eating GHEE.

How eating Ghee helps your child’s bones and skin?

Ghee is saturated fat and rich in providing good HDL, a type of Cholesterol. Refined oil and hydrogenated oils increase bad LDL, the bad cholesterol. Ghee contains Omega 3 and Omega 9,  vitamins A, D, E and K. Ghee made from organic butter of pastured cows is one of the highest natural sources of CLA (Conjugated Linoleic Acid).

Remember photosynthesis? Just like plants need sunlight to convert chlorophyll into food needed by the plants to grow so do we need the sunlight for the growth of our body.

How does cholesterol help the bone growth of your children?

  • When sunlight falls on the skin, it converts cholesterol into Vit D.
  • Then this Vit D with the help of Omega 3, magnesium and Vit K2 takes calcium from your food to your bones.
  • Consider Vit D as the boat which needs magnesium, Omega 3 and Vit K2 as it’s oars to carry Calcium to your bones.

Low cholesterol will cause weak bones, suicidal tendencies, memory loss, low concentration, loose motion, big tummy, pain in specific places, moles and bumps under the skin.

Cholesterol is actually one of the essential fats that you and your child must have in your body! It is not BAD. It is the TRANS FAT that is the real villain.

Food that contains Vit D are Ghee, Butter, Egg yolks, Cod liver oil, Fatty fish, cheese

Food that contains Omega 3 are Ghee, Butter, Egg yolks, Spinach, Indian spices,  flaxseed oil, walnuts, fatty fish, seafood.

Food that contains Vit K2 are  Ghee, Butter, Egg yolks, Fermented Food, Animal Based food.

Food that contains Magnesium are Kaju, Indian Spices, dark leafy greens, nuts, seeds, fish, beans, whole grains, curd, bananas, dried fruit.

Food that improve happiness and make depression go away

Do you find your child unable to memorize, does not sleep properly, looks depressed, irritated or moody? There may low serotonin in his brain and body that is the cause of all this.

These are some of the easily available food items that have good amount of Tryptophans that make Serotonin.

Ghee is the most important food item to keep Serotonin level high in your child’s body.

Bananas will never make them feel bad, especially when eaten in the morning. Banana Milk Shake anyone?

Kaju or Cashewnut is also full of Tryptophan. Give your moody kid this and see the change in the mood. You too can munch on Kajus and Bananas whenever you are feeling low especially during your monthlies.

Eggs are another easy and good source of Tryptophan.

Per day requirement of Tryptophan is 4mg per kilogram of body weight. So for a child who is 20 kg would need approx. 80mg of Tryptophan.

Dal, Fish, Chicken, Beans, Cheese, Seeds of pumpkin, Fishes too have it.

Sweet Dishes which contain Desi Ghee, Banana, Kaju, Paneer, Eggs are excellent to lift the mood and reduce the depression as they help in the making of Serotonin.

Savory Dishes which contain Desi Ghee, Cheese, Paneer, Dal, Eggs, Chicken, Mutton are excellent to lift the mood and reduce the depression as they help in the making of Serotonin.

How Ghee cures depression in children, teens and adults

Why some children easily go into depression or look unhappy? Of the many reasons, food is one of the important reason that may contribute to the depression and feeling not so good. 

What actually makes your child and you feel good?

Serotonin is a feel-good hormone, responsible for a variety of mind(mood) and body functions.

It is a neurotransmitter, that signals between nerve cells and affects ALL of the nearly 40 million brain cells!

A large amount of Serotonin is manufactured in our intestines in the enteric nervous system also called as the “gut brain”.

90% of your Serotonin supply is found in your digestive tract and blood platelets.

It has a calming effect on your mind(the brain in your head) AND your body (your gut brain or the enteric nervous system lining your digestive tract). That is why you don’t feel good when your stomach is upset for whatever reasons. 🙁

Serotonin affects you child’s :

  • Mood
  • Memory
  • Ability to learn
  • Appetite
  • Aggression
  • Impulse control
  • Sleep
  • Some social behaviors
  • Heart
  • Muscles
  • Hormones
  • Arousal
  • Sexual desire (teens and adults)

Where do you get Serotonin?

Ghee has that very necessary Cholesterol that is responsible for making Serotonin. If the amount of Cholesterol is low in your child’s body, then Serotonin will be low, which in turn is responsible for so many functions as mentioned above.

This one food cures depression in children, teens and adults. Approximately 25 percent of the total human cholesterol is in the brain. Our brain contains more cholesterol than any other organ in the body.

Did you know that if cholesterol in your child is not digested and absorbed properly then the brain-related functions suffer?  Memory becomes poor. Your child may easily suffer from depression and excessive emotions.

High LDL and low HDL are the cause of depression and memory issues. It’s known that Alzheimer’s disease is due to low cholesterol absorption.

Start eating and giving your children a good amount of homemade desi ghee preferably made of cow’s milk everyday to ensure the required quantity of cholesterol in the body to make enough serotonin for the brain and body.

Serotonin is also made from food that contains an amino acid called L-Tryptophan.

How to make ghee and butter at home for your children?

I have been making ghee at home since years!

I did not stop eating ghee even when the world was drowning us with the negative reports of cholesterol and heart diseases! Why? Well, I just knew one thing. My grand father lived beyond 80 years, eating ghee in a katori everyday. He had no diseases and no pains. I have seen all the old family members have glowing smooth skins even in their seventies. I have seen them walk without any support in their eighties. I have seen them without glasses or dentures. And I have seen all of them eating ghee! I believe that anything that has been doing good to our past generations is good for us too.

Then I started reading Ayurveda and its valuable researched proven notes on Ghee.

Medicines in the olden age used Ghee as the base to mix ingredients then how it can be bad for modern people in India?

So I continued to collect malai (cream) of cow’s milk. Yes, cow’s milk is important.

I use local dairy full cream cow’s milk. No tetrapak.

Boil the milk just enough to get it to the boiling temperature. Keep it in the fridge once it’s room temperature. After a few hours, a thick layer of malai is formed on top of the milk. The longer you keep it in the fridge the thicker will be this layer.

Remove the malai using a tea strainer and store it in a steel jar in the fridge. Do not use a plastic container. You may use glass jars or large cups too.

After you have 4 to 5 cups of malai (2-litre milk takes me 30 days to make 500ml Ghee), you are ready to make ghee. This will take a few hours.

Process 1 – Messy initially but neat later

  • Take out your food processor. Wash it with warm water.
  • Take out all the malai and put it into the processor.

  • Add chilled water with ice.
  • Churn it for 5 minutes. Stop and add more ice.
  • Keep on churning till the sound of the processor changes loud ghrrrrrrrrr to soft grrr. 🙂
  • Stop the processor.

  • Using a large vegetable steel strainer, filter out the butter milk from the butter. Yes, the thick yellowish white lump is your homemade butter.
  • You can use the white butter as normal butter. It is so yum!
  • In a kadhai, pour the butter lumps.
  • In slow fire let the butter melt.

  • The aroma of Ghee is very distinct and strong. Earlier my sons did not like it but now they love it!
  • Let it cool down. Transfer it into a steel or glass container.

Process 2 – Initially less messy but later on needs an effort to clean

  • Take out your kadhai and wash it with warm water.
  • Take out all the malai and put it into the kadhai.
  • Keep the flame on low fire and stir every 5 minutes.
  • The malai will start to melt into Ghee bypassing the butter stage.
  • It will take 1 to 2 hours for all the malai to be melted into ghee.

  • Now the messy part.
  • You will see the unwanted milk and water in the malai has burnt into brown-black residue which is crumbly and scary for the maid. But if you scrape the bottom of the kadhai frequently while ghee is made, it is easy to remove this residue.
  • While the ghee is still boiling on top of the brown burnt malai, you should start to scoop out into a steel container.
  • It will take some time to scoop out entire ghee but worth every second as the smell and taste will be better than the ghee made from the previous step.
  • The color of this ghee will be dark golden whereas the previous step ghee will be yellowish golden.
